Perfect dinner on a splurge day!

Face it- we all have those splurge days when we snack to much at work, eat out for lunch or have a few drinks at happy hour. Whatever the case, it's always smart to have a healthy dinner option waiting for you at home that's tasty, healthy and easy.

Surprisingly, these lemon butter salmon fillets from Gorton's, are very flavorful and yummy. They bake in the oven for 20 mins, so simple to make too. While they aren't very filling alone, they do pair up nicely with veggies and brown rice.

Each fillet clocks in at a super low 100-calories and only 2 WW points! Pretty awesome!

Crockpot Tacos

Imagine coming home from work to a house that smells like a taco...This crockpot concoction does just that!

The super easy recipe is also healthy as can be! I threw chicken breast, salsa, taco seasoning, mushrooms and onions into the crockpot on low before leaving for work. When I got home, I cranked the heat to medium and shredded the chicken. It's that easy!

We paired the mixture with 80-calorie low carb tortillas by Mission (2 WW points each or two for 5 points) and shredded lettuce.

If you have them, add peppers or black beans to the tacos too!

Simple. Easy. Delicious.

Spotted: Pizza Crust Find

Perfect on Oscars Night- or any time- these mini pizza shells by Joseph's Low Carb company are just awesome! I was stoked to find them at Walmart this weekend. Check out these stats: Each mini crust had only 80 calories and 15 carbs (2 WW points each) ... Seriously awesome! Pop them in the oven for 10 mins and enjoy. Great for lunch, dinner or a snack!

We made mushroom pizza tonight, but the possibilities are endless. Veggies, pineapple, turkey pepperoni...! We went with Light Ragu pasta sauce and fat free mozzarella cheese for the toppings. The pizzas were topped off with a little oregano and basil. Yum!

Apple Cinnamon Muffins

In the mood for a sweet, baked goodie for breakfast? Pass on those super high calorie, greasy cinnamon rolls and whip up a batch of these Fat Free Apple Cinnamon Muffins from Krusteaz. Each muffin weighs in at 140 calories each- a tad high for a little muffin, but only 3 WW points. Not bad for a breakfast treat! Pair it with scrambled eggs or egg beaters and fresh fruit- that's what we are having today-for a yummy and filling breakfast. (Oh, and they are kosher!)

These are also perfect for having friends and family over for brunch or coffee. You can indulge with your guests, and I promise, they will never guess your baked goods were fat free! - believe me, I love hosting brunch at our house and these are a secret weapon!

Happy National Margarita Day!

This National Margarita Day, swap the crazy high-cal, sugary margaritas, fried chips and greasy tacos for a healthy and yummy alternative. Dig into fresco tacos from Taco Bell (only 4 WW points each, or 2 for 7 WW points), Baked Tositos (120 calories for 16 chips- 3 WW points) with salsa, and Crystal Light Margarita with a shot of Tequila...in a fun glass of course! The Crystal Light Margarita is surprisingly delicious!

It's hard to say "no" to tex-mex food (chips and salsa are my downfall), so it's always smart to plan your own party at home. Plus, you can drink more at home!

Holidays are something to celebrate!

One of the best tricks in the book is hitting Target and Walmart after to any major holiday for great deals on individually packed, tiny-sized treats! Last Halloween, I scored 60 calorie mini packs of goldfish and mini fruit roll-ups for 40 calories each. All of your favorite snacks and candy for a mini-indulgence at half price or less- what could be better? (Not to mention they come in adorable, festive packaging!)

These mini crunch bars were $1.07 at Target and clock in at 50 calories each. Perfect for a little chocolate fix. Yum! (Plus, I can leave little love notes around the house!)

Tyson Perfection

After a busy day of work, you can't go wrong with pre-cooked chicken, and these teriyaki treats are delicious- and only 140 calories for a pretty big piece. They are hard to find, but you can get a big frozen bag at Sam's. Each piece is only 4 WW points, so enjoy with veggies and brown rice! Sweet, tangy, and juicy chicken- I highly recommend!

Easy-Healthy "Fried" Rice

Brown rice, chopped onion, lots of mushrooms (we love mushrooms), cubed grilled chicken, scrambled egg beaters, pam cooking spray, can of peas and carrots, soy sauce, garlic powder, paprika, and a splash of cheyenne pepper- thrown together in a wok.... Delicious, simple, and quick!

How to make it quick: microwaveable rice, pre-chopped onions packaged in the produce section, and packaged cooked chicken that is already diced. So easy!

Guilt-Free Love

I am officially obsessed with these fruity, crunchy snacks. They come in smaller packs too. Pineapple, Mango, and Banana air-dried to perfection with ZERO added ingredients. Enjoy them from the bag, toss into a trail mix with low fat popcorn and gerber puffs (I'll blog about those too), or sprinkle on yogurt for breakfast, the possibilities are endless and they are yummy and sweet. I found them at Walmart, but you can also get them at Super Target (and supposedly Sam's...) The small bags have 45-50 calories and the larger bag-with the mix shown in photo- has 110 calories. (0 WW Points Plus- I think!)


Snack for under 50 Calories

Found these adorable 45 Calorie apple cinnamon crunchy treats at target. You can't go wrong with a few extra calories to hold you off during the day- Healthy and Happy snacking! Not into dry cereal? With a cup of skim milk, these are just as yummy. For desert, pair them up with a cup of low-fat vanilla fro-yo. Yum! Plus, the packaging (made for kids) is really cute! (1 WW Points Plus)
